Harriet s Cheesecake

Ingredients:

18 oz cream cheese -- softened, 600 g.
2 large eggs
3/4 cup sugar -- 150 g.
2 tablespoon vanilla
1/2 teaspoon lemon juice
Topping:
1 cup sour cream
3-1/2 tablespoon sugar
1 teaspoon vanilla

Instructions:

Preheat oven to 350 F/180C degrees Combine cake ingredients and pour into a graham cracker crust. Bake 20 minutes at 350F/180C. Let pie cool 5 minutes then top with topping: Combine topping ingredients and pour over pie. Bake an additional 10-15 minutes until skewer inserted into centre shows signs of firmness and comes out relatively cleanly.
