Turtle Cheesecake
Ingredients:
2 cups vanilla wafer crumbs
6 tablespoon margarine -- melted
1 bag (14-oz.) caramels
1 can (5-oz.) evaporated milk
1 c. chopped pecans -- toasted
2 pkgs (8-oz.) cream cheese -- softened
1/2 c. sugar
1 tsp. vanilla extract
2 eggs
1/2 c. semisweet chocolate chips, melted Instructions:
Combine crumbs and margarine. Press onto bottom and sides of 9-inch
springform pan. Bake in preheated 350-degree oven for 10 minutes.
Remove and cool. In 1 1/2-qt. heavy saucepan, melt caramels with evaporated
milk over low heat, stirring frequently, until smooth. Pour over crust.
Top with pecans. Combine cream chese, sugar and vanilla, mixing at
medium speed on electric mixer until well blended. Add eggs, one at
a time, mixing well after each addition. Blend in chocolate; pour
over pecans. Bake in 350-degree oven 35 minutes until set. Loosen
cake from rim of pan. Cool before removing rim of pan, then chill.
Garnish with whipped cream, additional chopped nuts and/or cherries
if desired. Makes about 12 servings. Note: Toast pecans in a single
layer on cookie sheet. Bake in preheated 350-degree oven for 10 minutes,
shaking once to stir. |
